Fresh Strawberry Pie

 


First of all, I'd like to say how thankful I am to all of our brave, fallen soldiers that have fought over many years for the freedom in our blessed nation!  Most of us will never fully understand the sacrifice that was made for us to live in a free country.  To the soldiers--you are not forgotten!  To the families of the soldiers--Thank you!

On this muggy Memorial Day morning, I'm happy to share with you the strawberry pie that I made this weekend for my family!  I was given this recipe from my mother-in-love just last weekend, and it has me loving strawberry pie, once again.  I have never been a fan of the fake-tasting strawberry gelatin stuff you buy in bags.  I don't like the flavor or texture of that! 

This is different. 

It's a totally homemade filling that reminds me of jewel-toned, sweet strawberry preserves with fresh bits of from-the-patch strawberries that rests in a crisp golden crust!    It's the perfect cool summer dessert with a dollop of fresh whipped cream!




We all enjoyed eating this pie out on the back patio during sunset, while watching all my kittens play at our feet.  


Mr. Cozy lit the patio candles all around and set a comfortable mood for laughter and conversation!  We had such a nice time.  (The mosquitoes were uninvited guests though!)  

I will definitely make this fresh strawberry pie again while the sweet, little strawberries are still in season, because it's just that good.  Welcome back strawberry season with this delicious dessert!

Fresh Strawberry Pie

1 Pillsbury refrigerated pie crust

1 Qt. strawberries

1 c. sugar

3 Tbsp. cornstarch

Juice of 1 lemon



Roll out your pie crust and put it in the pie pan.

Flute the edges and prick bottom and sides with fork.
(Do a milk or egg wash now.  I did a wash with half n half here, to make the edges a glossy golden brown!)



Bake at 450 degrees for about 10 minutes or until the edges are golden brown .


Wash berries and reserve enough for garnish.  Hull the rest.  Put 1/2 of the hulled berries into a saucepan and crush with a potato masher. 




Add sugar, cornstarch and lemon juice.  


Cook over medium heat, stirring until mixture thickens and becomes translucent. 


Cool mixture.


Cut the rest of strawberries and gently stir into the cooled mixture.


Turn out filling into the 9 in. baked pie shell.
Place in refrigerater for several hours. 


Top with whipped cream and garnish.

Mama's Fresh Tomato Pie


Mom just started making tomato pie this year.  The first time was during a "girl's day" that we like to plan a few times a year.  We ate this with a green salad and crusty French bread.  I didn't know exactly how I'd like it since I'd never had anything quite like it-- but I loved it!!  It's something we've both wanted to try for years after watching Paula Deen make it.   I was excited when Mom surprised me by serving it for lunch that day!

Mmm, garden inspired tomato pie is a base of a buttery, crisp pie crust with a filling that combines fresh tomato slices, lots of bubbling cheeses and a bright bunch of fresh basil leaves--it's a Southern dish, yet Italian tasting at the same time.  (Now that's a great marriage of foods, to me!)  Mom adds her delicious twist to it by adding lots of Parmesan cheese to the top, along with extra slices of tomato and black olives. It not only looks beautiful, but the aroma of this dish is seriously irresistible when you take it out of the oven!

This is not a "healthy meal," due to some of the ingredients, but the key is moderation!  This meal is very much a treat for all of us with a nice side salad.  It is meatless, but it's hearty enough to be the main course.  For another option, you could make this a delicious side dish with some grilled chicken!  It could also be a new option for brunch, especially made into individual mini pies.  How cute would that be?
 Now that tomatoes are starting to get really good, this pie would be a perfect new summer recipe to make after coming home from the farmer's market!  I only put my favorite recipes on here, and this is one of them!!  Rustic tomato pie is a warm weather comfort food that I really hope you guys will try out sometime. :)   Thanks, Mom!




Mama's Rustic Tomato Pie

4 tomatoes, sliced

10 fresh basil leaves

1/2 onion, finely diced

1-9 in. Pre-baked deep dish pie crust

1 c. shredded Colby-jack cheese

1 c. shredded mozzarella

1 c. mayonnaise  (Yes, trust me on this one!)

1/4 c. grated parmesan cheese

salt & pepper


"Garnish"

tomato slices

black olives


Preheat oven to 350 degrees.  Place the sliced tomatoes in a colander in the sink in 1 layer.  Sprinkle with salt and allow to drain for 10 minutes.

Layer the tomato slices, basil and onion in a pie shell.  Season with salt and pepper.

Combine the grated cheese and mayonnaise.  Spread cheese mixture on top of the tomatoes.

Add the extra tomato slices and scatter the black olives.  Sprinkle Parmesan cheese evenly over the top and bake for 30 minutes until lightly golden brown and bubbly.

Allow to cool for at least 20 minutes.  Cut into slices and serve warm.

I love the Seabiscuit Cottage on Tybee Island!



Tybee Island is a very small, pedestrian friendly island. (We decided to rent bikes for our stay and travel around that way!)  It is not a tourist-y beach like many of the other Florida ones we've stayed at.  
It is primarily made of of residences (cottages and beach houses) with a small percentage of commercial property.




I would have to say that one of our favorite things about our whole vacation was our cute, little cottage--The Seabiscuit!!!

I LOVE the colors of the cottage. Pink with a green screened in porch and a yellow door.

The white picket fence completes the storybook appeal.


My husband found this adorable cottage that boasted coziness, perfect for a romantic couple's get-away!
Although is less than 500 sq. ft. in size, it's big on charm.


 Jane Coslick is a renown designer who has taken older places on Tybee Island and completely renovated them from the inside out.  She is known for her shabby chic decor that is simply perfect for a place close to the beach.  Her work is exquisite. 

Jane did a major overhaul on the Seabisuit a few years ago.




So excited, I'm about to enter our cottage--our home away from home--for the very first time!


This porch was my favorite room!

Love the hanging lanterns.  They would provide a glow to come home to after dinner.

We enjoyed these adirondack chairs every morning with coffee!  


This floor is made of old Savannah brick that had been salvaged.

Every front porch needs a rocking chair, I mean, we were in the deep South!

The whole place was light and bright.








The tall beadboard ceilings were painted a pale celery green.  What a great way to bring them down a bit onto the soft, white walls.

I love all the details, even the plates were so pretty!

The green ones have dragonflies on them.  Those were the ones we usually used for breakfast.

Yes, I'll admit that I cried a little when we had to say goodbye. :(
I won't post that picture.

But there will be yet another post about our stay on the island, and the food we ate!
